Chicken Curry with Spinach recipe

A great way to get vegetables and protein into one dish. My kids love it because it can be ‘mild’ yet flavorful but if your tastes are anything like mine and you like it hot and spicy….just double the amount of Garam Masala, Red Chili Powder and Curry Powder listed below….come on, be brave and give it a shot!!!


Ingredients:

Chicken – 2 lbs boneless, skinless thigh, bite-size pieces

Spinach – 16oz pkt, frozen chopped

Oil – 4 tsp

Black Cardamom – 1

Cinnamon – 1” stick

Green Cardamom – 2

Bay Leaves – 2

Cloves – 4

Onions – 1 large, finely chopped

Ginger – 2 tsp (heaped)

Garlic – 5 cloves, finely chopped

Green Chilies – to taste

Salt – to taste

Red Chili Powder – ½ tsp

GaramMasala – 1 tsp

Cumin Powder – 1 tsp

Coriander Powder – 1 tsp

Curry Powder – 1 tsp

Indian Egg Curry

This is a dish that my friend made for my 7 year son when he was at her place….he just could not stop talking about. Needless to say, I had to learn how to make it. Thanks, Indu!!


Ingredients:
Oil – 2 tbsp
Bay Leaf – 1
Cloves – 3
Cinnamon – ½” stick
Cumin Seeds – ½ tsp
Fennel Seeds – ½ tsp
Onion – 1 medium, finely chopped
Turmeric – ¼ tsp
Chili powder – to taste
Coriander Powder – 1 tsp
Chicken Masala – 1 tsp
Tomato puree – ½ cup
Sugar – 1 tsp
Salt – to taste
Coconut milk – 2 cups
Eggs – 6, hard boiled and peeled
Cilantro – 5 sprigs, chopped (for garnishing)

Shahi Paneer- Paneer in Cashew Sauce recipe

The literal translation of ShahiPaneer is ‘Royal Paneer’…very appropriate – A dish fit for a king. The richness of the sauce comes from the cashews.

Ingredients:
Paneer – 14oz block (home-made or store bought), cubed
Oil – 3 tbsp
Onions – 2 small, finely copped
Tomato Sauce – 1, 8oz can
Garlic – 3 cloves, finely chopped
Ginger – 1 tbsp, grated
Green Chili – to taste, finely chopped
Cumin Powder – 2 tsp
Coriander Powder – 2 tsp
GaramMasala – 2 tsp
Cashew Pieces – ¾ cup
Milk- 1 cup
Water – 1 1/2 cup
Sugar – 1 tbsp
Salt – to taste
Cilantro – 5 sprigs, finely chopped for garnishing
